It took us a long time to work up the chutzpah to brew a German Pilsner; mainly for one simple reason, doing a bad German Pilsner to us is how a baseball fan would feel if they threw out the ceremonial first pitch at a Phillies game on "Free D-battery Night" and the ball didn't make it past the mound. For this reason we kept things traditional by using a simple can clean line up of German malt for that trademark graininess with hints of bread dough and hay, fermenting with a classic German Lager strain we have grown to love over the last few hundred years, and finished things off with a true-to-style amount of Hersbrucker hops for that trademark German floral character one would have to travel to Bavaria to enjoy fresh. Trying to improve on this classic style would be like watching Michael Bay remake Fawlty Towers; it's unnecessary and ill-considered. We just wanted to focus on making the best possible German Pils we could and pay homage to the legendary beer that paved the way for us all.
