Sometimes getting a new hop that isn't popular yet to catch on is a lot like getting your dog to take medicine; it's a lot easier if you wrap the pill in some bacon, and that's figuratively what we did a few years back, by taking an awesome New Zealand hop by the name of Waimea, and wrapping it in a bunch of Mosaic so everyone could quaff what is good for them. Combining these two hops from opposite corners of the earth makes for one monumental pairing, balancing out its mildly sweet mouthfeel with a slightly elevated bitterness for a hazy, and over-saturating the beer with notes of pureed peaches, tangerine juice, white grapefruit, mango, summer melon, white grapes, Anjou pears, and hints of pine resin.
