Playing with milk sugar was fun for the industry at first, adding a creamy and silky texture to Stouts and the like, until it stopped being fun. No one asked for a Lactose Lager, and no one should have been given a Lactose Lager. In all honesty, we don't even know if anyone has made a Lactose Lager, but we are guessing someone has, and for any reason other than alliteration it is just a step too far. To push back on the Lactosification of beer we stripped all of the milk sugar from our Parfait sour recipe, let the beer dry out a bit more, but added in every bit as much fruit and vanilla, so those that are lactose intolerant, or just intolerant of lactose, can enjoy one of our Parfait beers without the guilt or gastrointestinal regret.
